If your hot water tank is set to 160 degrees and your mixing valve is set to 120 degrees, then the valve will mix your cold and hot water until it reaches 120 degrees. Only once it has reached that temperature will it allow water to release through your showerhead and faucets. And this may sounds nuts, but by turning your water tank up, you will marginally increase how long you can use hot water before it drops below 120 degrees.

Here is why: If you set your water tank was at 120 degrees to start off with then 100% of the water will come straight out of your tank and the temperature of your water will begin to drop even lower. However, if you were to set your tank to 160 degrees then it needs to be mixed with cold water outside your tank to drop to 120. You will be using less hot water from the tank to get what you want. More hot water supply while using the same smaller tank and a savings on hot water heating overall!
